I’m just welcoming myself back to my blog, after some thinking time away.
There’s been lots of cooking, lots of photography, lots of learning and lots of eating going on. Hopefully I can share some of the new discoveries with you. In the interim, here’s some of my recent favourite recipes, from some of my favourite sites.
For lunch or dinner (or breaky in my case): For a healthy, fresh, amazing vegetarian meal, try My New Roots raw taco fiesta. It is an absolute triumph. I had it again for breakfast the next day.
For dessert: A sweet, beautiful frozen pink cheesecake from Green Kitchen Stories that is so so pretty and highly addictive. Even the cheesecake base on it’s own is beautiful. Simple and easy to make. Perfect for summer evenings.
For nibbles: Also from Green Kitchen Stories, these unreal nut crackers. I think I ate the whole batch though in one sitting. Probably not supposed to do that.
On the cookbook front: I received Karen Martini’s Feasting for Christmas, and cannot stop cooking from it. Nor could I stop looking at it – beautiful photography too. I love that it is organised by occasion – solves the challenge of menu planning.
Plenty by Yottam Ottolenghi is another cookbook (it’s vegetarian) I’ve loved cooking from. The soba noodle with aubergine & mango has become one of my go-to recipes for lunch. It’s impressive and easy to make with beautiful flavours. I’m still working my way through this cookbook – there’s so much in it.
